Fr. George's Recommended Recipes:


Fr. George's #1 MONK'S SPECIAL - STIFATHO (BEEF WITH ONIONS)
    3/4 cup olive oil
    2 pounds stewing beef, cut into 1-1/2 inch cubes
    2 tablespoons vinegar
    1/2 cup red wine
    1 cup tomato sauce
    4 cloves garlic
    1 teaspoon sugar
    2 small bay leaves
    3 whole cloves
    1 cinnamon stick
    1 teaspoon salt
    1/2 teaspoon pepper
    2 pounds small white onions
    Full pot water
Heat oil and brown beef cubes. When beef begins to sizzle, add vinegar and wine. Stir. Add tomato sauce, garlic, sugar, bay leaves, cloves, cinnamon stick, salt and pepper. Cover tightly and simmer for 1/2 hour, adding water if necessary.
Peel onions and, with very sharp knife (first aid kit by your side if necessary), cut cross into onions on the root end. This will keep the onions whole while cooking. Par boil the onions for about 3 minutes then drain. Add them to the meat. Stir to combine.
Pour in enough boiling water to cover and simmer for 1-1/2 hours without uncovering pot but shaking the pot often to mix.
DO NOT UNCOVER THE POT. THIS WILL KEEP IN THE FLAVOR AND AROMA!
Remove bay leaves, cloves and cinnamon stick. Serve with a good loaf of bread, Greek Salad and a glass of red wine.
